Somali Rice with Vegetables

3 cups of white basmati rice; rinsed until liquid is clear 1/4 cup of oil 1 onion; sliced 1 c. frozen vegetables (I used peas an carrots.) 3 chicken cubes 4 cardamom pods 4 cloves 1 cinnamon stick 4 cups chicken stock (a little more might be needed) 1. Heat the oil in a flat bottomed pot. 2. Add onions, vegetables, chicken cubes, cardamom, cloves, and cinnamon; saute until the onion are translucent. 3. Stir in the rice and the chicken stock; cover and bring to a boil. 4. Reduce heat and cook until the rice is tender. This can take between 15 - 20 minutes. 5. Fluff with a fork.

Lamb and Potato Fry

1 lbs. lamb; boiled until very tender 3 potatoes; large chunks 3 Tbsp. olive oil 1 chicken cube salt to taste 1. Heat oil in a pot; add the cooked lamb and stir-fry until it is coated with the oil and slightly brown. 2. Add the chicken cube and the potatoes; cooke covered until tender. 3. Add salt if needed. NOTE- Do not over stir the potatoes. Doing so will make this dish mushy. Can be served with rice.

Chicken Legs and Potato Sukhar

6 chicken drumsticks; skinned and washed 3 Tbsp. oil 1 lg. potat; peeled and cut in half and then quartered 1 onion; sliced 1 lg. carrot; cut into 1 inch pieces 1 chicken cube 1/2 c. water or chicken broth 1/4 ts. cumin 1/4 ts. coriander 2 Tbsp. cilantro 1. Heat oil in a pot with a lid. 2. Add the chicken and brown over low heat for 10 minutes. 3. Add the chicken cube, cumin, coriander, and the water; simmer for 5 minutes. 4. Add the potato and carrot; simmer covered for 10 minutes or until the carrot and potato are tender. 5. Add the onion and cilantro; cook for 2 minutes to slightly soften the onions.

Hi everyone, It's been a while since I posted any good recipes. More will come shortly. I was so upset yesterday because one of my lovely children accidentally threw out my recipe book. I was so angry! All my notes were in there. So now, I have to write them by memory. For those that I just can't remember, I will have to remake them. I have also been busy designing and sewing my daughter's skirts for next year. For those of you that don't know, I did my post secondary education in fashion design and garment creation. Unfortunately I have been out of practice, so I am taking my time. I figure that I am doing ok considering I haven't touched a sewing machine since before I went to teach in Saudi. I think I will also post some pics of my creations. Amina

Sukhar and Potato with Pita

1 lbs. beef; cubed 2 potatoes; peeled and cubed 1 onion; chopped 2 Tbsp. olive oil 1 ts. garlic; minced 1 chicken cube 1/2 cup water 1/2 ts. cumin 1. Heat oil in a pot; add beef and simmer covered until cooked. 2. Add the garlic, chicken cube,water, cumin, and potatoes. 3. Simmer covered until the potatoes are almost tender. 4. Add the onions; cook covered for 2 minutes.
